At an altitude of 1,100m, this unique volcanic wine is born from vineyards among the highest in Europe. It is a white wine with overwhelming minerality and complexity, created by the extreme environment of Mount Etna's lava-covered northwest slope.
Aromas of apple, pear, white peach, and pineapple are layered with refreshing citrus nuances. Mineral notes derived from the volcanic soil, along with subtle hints of vanilla and white pepper, contribute to a complex and refined bouquet.
The palate is rich yet firm, with concentrated fruit flavors and beautiful acidity leading to a long finish. With its golden hue, this is a special bottle that allows you to experience the magnificent terroir of Etna.
This versatile white wine pairs well with a wide range of dishes, from fish and shellfish to pork, chicken, and vegetable dishes.
It harmonizes beautifully with Japanese cuisine such as sushi, sashimi, and shrimp tempura, as well as Sicilian specialties like clam pasta, pasta with sardines and wild fennel, arancini, and anchovy crispelle.
Carefully selected grapes are hand-harvested from late October to early November and meticulously transported in 18kg boxes. Upon arrival at the winery, they undergo a second selection.
After destemming, the grapes are softly pressed over two hours without crushing. Only the highest quality 60% of the juice is used, followed by 36 hours of cold maceration. Fermentation with indigenous yeasts then takes place at 18-20°C, and the wine is aged under temperature control with weekly bâtonnage.
After bottling, the wine is aged for approximately four years in the bottle before release, resulting in a taste that is not only youthful but also complex and deep.

Don Alfio, who managed the vineyards inherited from his grandfather, has continued to protect rare vineyards and the Etna ecosystem through traditional organic farming methods. The vineyards retain ancient Alberello-trained old vines and rare fruit trees, teeming with rich biodiversity.
To pass on this heritage to the future, Sonia Spadaro Mulone took over the project. She produces wines that purely express the terroir of Mount Etna, attracting attention from wine lovers around the world.
