This 100% Sangiovese red wine is cultivated in the cool highlands of Monte Amiata in southern Tuscany. Its charm lies in the fresh, pure fruit flavors produced by the high altitude and the significant diurnal temperature variation.
Aromas of red fruits reminiscent of cherry, strawberry, pomegranate, and raspberry spread, with a light and fresh palate. The tannins are gentle and soft, creating an elegant style that allows for a straightforward enjoyment of the fruit's beauty.
It pairs well with cheese platters, light meat dishes like grilled chicken or cutlets, and pasta or pizza with tomato sauce. The fruitiness and gentle tannins enhance the food.
Hand-harvested grapes are destemmed and crushed, then undergo two days of maceration. After pressing, the juice is separated from the skins and fermented in stainless steel tanks.
After fermentation, the lees and cloudiness are allowed to settle naturally through decantation, and only the clear liquid is transferred to another tank for aging. Careful aging in stainless steel tanks maximizes the fresh appeal of the fruit itself.
BAKKANALI is a winery based in Monte Amiata, Tuscany, founded by Hugo Fabbri and Sebastian Nacelo.
The unique personality of this region is shaped by its high altitude, snow, significant diurnal temperature variation, ancient geology, and calcium-rich soil. Furthermore, the complex environment changes to flysch and volcanic sandy soil as the altitude increases.
The two winemakers approach winemaking with the passion of explorers discovering a new land, listening to the voice of this terroir. They aim to express the individuality of the land and seasons to the fullest, respecting the principles of biodynamic farming.
