The harvested grapes are carefully selected by hand, and only the first-press juice from soft pressing is used. Subsequent pressings, which can cause off-flavors and bitterness, are not used.
Fermentation takes place in oak barrels, followed by long-term aging on yeasts. The aging period significantly exceeds Franciacorta regulations, resulting in incredibly delicate and creamy bubbles and complex aromas.
Only the highest quality vintages are released as Riserva, making production very limited.
