Tasting Notes

Citrus aromas of lemon and grapefruit are layered with notes of ripe fruit reminiscent of apricot and white peach.

Further complexity is added by spice notes recalling saffron and white pepper, along with subtle hints of vanilla and herbs.

On the palate, rich fruit flavors, lively acidity, and firm minerality are beautifully balanced. The impressive depth of flavor and long finish make this a wine that fully expresses the charm of Trebbiano Spoletino.

Pairing

It pairs exceptionally well with appetizers such as prosciutto and olives, seafood carpaccio, and oil-based pasta.

It also harmonizes beautifully with chicken and pork dishes, grilled vegetables, and can be enjoyed with a wide range of cuisines from Japanese to Mediterranean.

Winemaking

Carefully selected grapes are harvested by hand, then sorted again at the winery. After harvesting, a cold maceration of 18-24 hours extracts the fruit aromas and the varietal's unique characteristics.

The grapes are then soft-pressed and fermented at low temperatures in stainless steel tanks. Aging proceeds with bâtonnage on fine lees.

Further aging takes place in 500L French oak barrels, followed by bottling after a total of approximately 7 months of aging. An additional 4 months of bottle aging develops a flavor profile of complexity and elegance.

About the Winery

Le Thadee is an Umbrian winery established in 2018 by the Natali family, who have been cultivating grapes for generations.

They acquired excellent vineyards in Montefalco and handle everything from cultivation to winemaking and bottling in-house.

In their organically farmed vineyards, pre-phylloxera old vines of Trebbiano Spoletino still survive. Some vines are over 128 years old and are cultivated using the traditional "vite maritata" system with elm trees.

This notable producer pursues high-quality, small-batch wine production, leveraging Spoleto's rich natural environment and the unique character of its historic vineyards. Their wines, blending tradition and innovation, have garnered high acclaim both domestically and internationally.
