Tasting Note

Aromas of white flowers, lemon, and peach are layered with nuances of ginger and Mediterranean herbs, creating a delicate and complex bouquet.

On the palate, vibrant acidity and rich minerality unfold, leading to a long, elegant finish reminiscent of citrus.

The wine harmonizes volcanic soil salinity with a precise texture, fully expressing the unique character of Etna.

Pairing

It pairs exceptionally well with seafood dishes such as raw oysters, carpaccio, acqua pazza, grilled shrimp, and sea urchin cream pasta.

It also harmonizes beautifully with dishes featuring citrus, herbs, and salt, making it enjoyable with a wide range of cuisines from Mediterranean to Japanese.

Recommended for dishes that highlight the natural flavors of ingredients, such as sushi, sashimi, and salt-grilled white fish.

Winemaking

Grapes are hand-harvested over approximately 10 days in early October. Immediately after harvest, they are pressed, followed by 3 hours of cold maceration (cryomaceration), then clarified and fermented at low temperatures.

Fermentation takes place 90% in stainless steel tanks and 10% in French oak barrels, followed by 8 months of aging on the lees.

The result is an elegant style that combines fresh fruitiness with a complex texture, having the potential for long aging.
