This Franciacorta boasts a pure and crisp taste, characteristic of zero dosage.
Fragrant aromas reminiscent of honey, vanilla, and freshly baked brioche are intertwined with rich nuances of ripe fruit.
The delicate and creamy mousse, sharp minerality, and profound finish, all born from over 8 years of long-term aging, are exquisitely balanced.
It pairs exceptionally well with delicately seasoned fish dishes and seafood.
It complements dishes that highlight the natural flavors of ingredients, such as seafood pasta, shellfish dishes, and carefully prepared appetizers.
The crisp taste, typical of zero dosage, also goes well with Japanese cuisine, making it an excellent pairing for sushi and sashimi.
Carefully selected grapes are hand-picked, and the wine is made using the traditional method (Metodo Classico) of secondary fermentation in the bottle.
A portion of the wine is fermented in oak barrels (barriques) to impart rich complexity and depth.
It then ages on lees for approximately 8 years. After disgorgement, it undergoes a further 3 months of aging in the cellar, being released about 9 years after harvest.
The combination of long-term aging and zero dosage purely expresses the inherent character of the grapes and the terroir of Franciacorta.
